Usually when visiting a restaurant in Tuscany, you will be offered a °land° and a °sea° choice, i.e. meat or fish meal. And it is considered highly unappropriate to mix the courses during the meal. So if you start with fish, you are supposed to stay on fish also for the pasta dish and the main course. And the same is accounted for the meat part. If you are a vegetarian, you will be considered a bit odd, but still will have a white choice to pick your meal from.
